Apple rose almond butter tarts

These tarts are just the perfect mid morning snack or afternoon tea time treat! This was my take on the classic 'apple and almond butter/ peanut butter' that so many seem to have as a snack throughout the day. This tart is extremely decadent and creamy, providing the perfect clean indulgent. It is easy to take with you on-the-go and my boyfriend even likes having them for breakfast if he's in a rush.

These are:

refined-sugar free✔gluten-free✔high protein✔high fibre✔ low carb✔vegan✔

Ingredients:

For the base:

Approximately 11 medjool dates

1 cup almond and/or peanut flour

1/2 cup dissected coconut

3 tsp melted coconut oil

4 tbsp hot water

1tsp vanilla

pinch of salt

For the filling:

2 tbsp natural almond/peanut butter

1 bannana

2 tbsp raw organic honey

Method:

1.Preheat oven to 180°C. Grease 6 medium sized tart trays or alternatively you can even use a muffin tin.

2. For the base place all the ingredients into a food processor and process well. All ingredients should be well mixed. Place a tablespoon of the mixture into each tart tray and spread it out forming a thick solid base in the tart container.

3. Place into oven and bake for roughly 8 mins until golden brown ( do not over cook!!)

4. Allow tarts to cool. For the filling place all ingredients inside a food processor and blend well.

5. Fill all tart bases with the filling and refrigerate for a minimum of 20 mins.

6. Thinly slice apple as a topping!
