Chocolate chip salted caramel cookie dough squares


This recipe is just too divine! I was busy in the kitchen making some delicious healthy alternatives for the week when i suddenly found myself creating this recipe. For days i have been craving a delicious chewy chocolate chocolate chip cookie bursting with flavour. At first I felt like making a deep dish chocolate chip cookie, but i wanted something that i could easily take with me while i am on the go and store easily. These cookie dough squares are everything you want…..a soft chewy cookie with hints of vanilla, chocolate chips, and sweet salty caramel! Perfect for afternoon tea time or even to have as a mid morning snack!

Recipe:

For the chocolate chip cookie layer

135g almond flour ( just place some almonds in a food processor)

140g rolled oats

1 teaspoon pure vanilla extract

1/3 cup + 2 tbsps of raw honey or maple syrup

4 tbsp melted coconut oil

2 tbsp almond butter

1/2 slab lindt 70% dark chocolate

For the salted caramel cookie layer

1 cup medjool dates

1 cup oats

2 tbsp melted coconut oil

1 tsp pure vanilla extract

1.5 cups almond milk

0.5 tsp baking powder

pinch of salt

Method

Preheat oven to 180. Line a deep dish rectangular baking tray with baking paper For the cookie layer: place all dry ingredients into a food processor and blend well. In a separate bowl mix all wet ingredients well together. Once done pour the wet mixture into the food processor with the dry mixture and blend well. Chop lindt slab into small chocolate chips and stir into the mixture

Place mixture into the baking tray and spread evenly throughout. Bake this layer for roughly 5-8 mins. Take out and allow to rest (It should be very underdone). For the salted caramel cookie layer: In a food processor blend the medjool dates, coconut oil, almond milk, vanilla, baking powder and oats. This mixture should be significantly more runny that the chocolate chip cookie layer.

Pour this mixture ontop of the cookie layer and place in oven for another 10 mins. Make sure not to burn the bottom layer and the salted caramel layer should be just cooked through and not overdone. Allow to cool and cut into slices
